It’s been my experience throughout life that to learn, I must listen. I never know where or when a great idea will reveal itself. I practice not always monopolizing the conversation with my recent laments. Instead, I ask questions. When I’m quiet, I hear other people’s great ideas.
At my last haircut, my stylist Anna told me about her newest recipe creation. Potato pancakes without the potatoes. Instead, the main ingredient is zucchini. I was intrigued. #1) I don’t like potatoes. #2) I’m always working on getting more veggies in my daily food intake.
I tried her recipe this morning.
Annacakes
2 grated zucchinis (I used a cheese grater…easy!)
1 egg
2 T. flour
Salt and pepper
Additional spice*
*Today, I added this lemon herb blend that I have. I mixed and cooked it like a pancake. Then, I ate one with a scrambled egg and cheese. Surprisingly tasty! And it’s a nice alternative to a carb. I griddled and refrigerated the rest. Anna said she uses them in a variety of ways to dress up a meal. And well, she IS a genius! I love my hair and my Annacakes.
I’m sharing a real recipe. I’m as shocked as my family and friends will be. 😉
